Ingredients

  • 500 g cashews
  • 500 g almonds
  • 1 egg white, well beaten
  • 1 tsp apple cider vinegar (or vanilla)
  • 1 tsp salt
  • 1½ tbsp za’atar
  • 2 tbsp olive oil

Directions

  1. Preheat oven to 160°C (320°F).
  2. In a large bowl, whisk the egg white until frothy.
  3. Add apple cider vinegar, olive oil, salt, and za’atar.
  4. Add the cashews and almonds, then mix until fully coated.
  5. Spread the nuts in a single layer on a lined baking tray.
  6. Bake for 20–30 minutes, stirring halfway through.
  7. Bake until golden and crunchy.
  8. Let cool completely before storing in an airtight container.
