Ingredients

  • 2 eggs
  • 3/4 cup almond flour
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 3 tbsp melted butter
  • 3 tbsp sugar (or sweetener)
  • 2 drops food coloring

Directions

  1. Preheat the oven to 170 deg C (340 deg F).
  2. In a bowl, whisk the eggs and sugar until combined.
  3. Add melted butter and vanilla extract.
  4. Mix in almond flour and baking powder until smooth.
  5. Add food coloring and stir until evenly colored.
  6. Pour the batter into lined cupcake molds.
  7. Bake for 8-10 minutes or until lightly golden and set.
  8. Let cool before decorating or serving.
