Sugar Free Linzer Cookies

Delicate almond-flour sandwich cookies filled with strawberry jam and dusted with powdered sugar - a sugar-free take on the classic Austrian Christmas cookie.

Ingredients

  • 1 3/4 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 tsp xanthan gum
  • 85 g unsalted butter, softened
  • 1/2 cup granulated sugar (or sweetener)
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 tbsp strawberry jam (sugar-free)
  • 2 tsp powdered sugar (or powdered sweetener)

Directions

  1. Preheat the oven to 170 deg C (340 deg F).
  2. In a bowl, whisk together almond flour, coconut flour, and xanthan gum.
  3. In another bowl, beat the softened butter and sugar until creamy.
  4. Add the egg and vanilla extract and mix well.
  5. Gradually add the dry ingredients and mix until a soft dough forms.
  6. Refrigerate the dough for 20-30 minutes if too soft to handle.
  7. Roll out the dough between parchment paper.
  8. Cut cookies into shapes and cut a small center hole in half of them.
  9. Place on a lined baking tray.
  10. Bake for 10-12 minutes until lightly golden.
  11. Let the cookies cool completely.
  12. Spread strawberry jam on the whole cookies and top with the cut-out cookies.
  13. Dust with powdered sugar before serving.
