Sugar Free Linzer Cookies
Delicate almond-flour sandwich cookies filled with strawberry jam and dusted with powdered sugar - a sugar-free take on the classic Austrian Christmas cookie.

Ingredients
- 1 3/4 cups almond flour
- 1/4 cup coconut flour
- 1/2 tsp xanthan gum
- 85 g unsalted butter, softened
- 1/2 cup granulated sugar (or sweetener)
- 1 large egg
- 1 tsp vanilla extract
- 3 tbsp strawberry jam (sugar-free)
- 2 tsp powdered sugar (or powdered sweetener)
Directions
- Preheat the oven to 170 deg C (340 deg F).
- In a bowl, whisk together almond flour, coconut flour, and xanthan gum.
- In another bowl, beat the softened butter and sugar until creamy.
- Add the egg and vanilla extract and mix well.
- Gradually add the dry ingredients and mix until a soft dough forms.
- Refrigerate the dough for 20-30 minutes if too soft to handle.
- Roll out the dough between parchment paper.
- Cut cookies into shapes and cut a small center hole in half of them.
- Place on a lined baking tray.
- Bake for 10-12 minutes until lightly golden.
- Let the cookies cool completely.
- Spread strawberry jam on the whole cookies and top with the cut-out cookies.
- Dust with powdered sugar before serving.
