Ingredients
- 2 cups almond flour
- 3/4 cup sweetener
- 1 tsp baking powder
- 1/4 tsp salt
- 1 large egg
- 1/4 cup butter, melted and cooled
- 1 tsp vanilla extract
- Sugar-free chocolate chips
- Pistachio butter
Directions
- Scoop small portions of pistachio butter onto a tray and freeze until firm.
- Preheat the oven to 170 deg C (340 deg F).
- In a bowl, combine almond flour, sweetener, baking powder, and salt.
- Add the egg, melted butter, and vanilla extract.
- Mix until a soft cookie dough forms.
- Fold in sugar-free chocolate chips if desired.
- Flatten portions of dough in your hand.
- Place a frozen pistachio butter ball in the center and seal the dough around it.
- Arrange the cookies on a lined baking tray.
- Chill the stuffed cookies again for 10-15 minutes.
- Bake until golden brown, about 10-14 minutes.
- Let cool slightly before serving.
