Pistachio Stuffed Cookies

Ingredients

  • 2 cups almond flour
  • 3/4 cup sweetener
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 large egg
  • 1/4 cup butter, melted and cooled
  • 1 tsp vanilla extract
  • Sugar-free chocolate chips
  • Pistachio butter

Directions

  1. Scoop small portions of pistachio butter onto a tray and freeze until firm.
  2. Preheat the oven to 170 deg C (340 deg F).
  3. In a bowl, combine almond flour, sweetener, baking powder, and salt.
  4. Add the egg, melted butter, and vanilla extract.
  5. Mix until a soft cookie dough forms.
  6. Fold in sugar-free chocolate chips if desired.
  7. Flatten portions of dough in your hand.
  8. Place a frozen pistachio butter ball in the center and seal the dough around it.
  9. Arrange the cookies on a lined baking tray.
  10. Chill the stuffed cookies again for 10-15 minutes.
  11. Bake until golden brown, about 10-14 minutes.
  12. Let cool slightly before serving.
