Peach, Burrata & Lamb Prosciutto Salad

Ingredients

  • 4 cups arugula
  • 2 ripe peaches, sliced
  • 2 burrata balls
  • 120–150 g lamb prosciutto
  • Fresh mint leaves for garnish
  • 4 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tbsp finely chopped fresh mint
  • Salt & black pepper to taste
  • Toasted pistachios, balsamic glaze, or avocado slices

Directions

  1. Arrange the arugula on a large serving platter.
  2. Add sliced peaches and torn burrata.
  3. Layer the lamb prosciutto around the salad.
  4. Whisk together the olive oil, lemon juice, mustard, fresh mint, salt, and pepper.
  5. Drizzle over the salad just before serving.
