Ingredients
- 4 cups arugula
- 2 ripe peaches, sliced
- 2 burrata balls
- 120–150 g lamb prosciutto
- Fresh mint leaves for garnish
- 4 tbsp olive oil
- 2 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 tbsp finely chopped fresh mint
- Salt & black pepper to taste
- Toasted pistachios, balsamic glaze, or avocado slices
Directions
- Arrange the arugula on a large serving platter.
- Add sliced peaches and torn burrata.
- Layer the lamb prosciutto around the salad.
- Whisk together the olive oil, lemon juice, mustard, fresh mint, salt, and pepper.
- Drizzle over the salad just before serving.
