Ingredients

  • 4 eggs
  • ⅔ cup sweetener
  • ½ cup olive oil
  • ¼ cup Greek yogurt
  • 2 cups almond flour
  • ¼ cup coconut flour
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 2 tsp baking powder
  • Pinch of salt

Directions

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, whisk the eggs and sweetener until smooth.
  3. Add olive oil, Greek yogurt, lemon zest, and lemon juice.
  4. Mix until well combined.
  5. Add almond flour, coconut flour, baking powder, and salt.
  6. Stir until a smooth batter forms.
  7. Pour the batter into a lined or greased cake pan.
  8. Bake for 30–35 minutes or until a toothpick comes out clean.
  9. Let the cake cool before slicing and serving.
