Ingredients
- 4 eggs
- ⅔ cup sweetener
- ½ cup olive oil
- ¼ cup Greek yogurt
- 2 cups almond flour
- ¼ cup coconut flour
- Zest of 1 lemon
- 2 tbsp lemon juice
- 2 tsp baking powder
- Pinch of salt
Directions
- Preheat the oven to 180°C (350°F).
- In a large bowl, whisk the eggs and sweetener until smooth.
- Add olive oil, Greek yogurt, lemon zest, and lemon juice.
- Mix until well combined.
- Add almond flour, coconut flour, baking powder, and salt.
- Stir until a smooth batter forms.
- Pour the batter into a lined or greased cake pan.
- Bake for 30–35 minutes or until a toothpick comes out clean.
- Let the cake cool before slicing and serving.
