Keto Peach Cobbler Muffins

Ingredients
- ½ cup almond flour
- 3 tbsp Swerve Brown sweetener
- 1 tbsp melted butter
- ½ cup whipping cream
- 3 large eggs
- 1 tsp vanilla extract
- 2 cups almond flour
- 1/4 cup coconut flour
- ½ cup sweetener
- 2 tsp baking powder
- 2 cups finely chopped peaches
Directions
- In a medium bowl, whisk together almond flour, Swerve Brown, and salt.
- Stir in melted butter until the mixture resembles coarse crumbs.
- Set aside.
- Preheat oven to 350°F (175°C).
- Line 8 muffin cups with parchment or silicone liners.
- In a large bowl, whisk together whipping cream, eggs, vanilla extract,
- Stir in almond flour, sweetener, baking powder until combined.
- Fold in 1½ cups of the chopped peaches.
- Divide batter among muffin cups, filling each about ¾ full.
- Top with remaining peaches.
- Sprinkle streusel topping evenly over each muffin.
- Bake for 25–30 minutes, until golden brown and a toothpick inserted in the center comes out clean.
- Let cool completely
