Keto Peach Cobbler Muffins

Ingredients

  • ½ cup almond flour
  • 3 tbsp Swerve Brown sweetener
  • 1 tbsp melted butter
  • ½ cup whipping cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 cups almond flour
  • 1/4 cup coconut flour
  • ½ cup sweetener
  • 2 tsp baking powder
  • 2 cups finely chopped peaches

Directions

  1. In a medium bowl, whisk together almond flour, Swerve Brown, and salt.
  2. Stir in melted butter until the mixture resembles coarse crumbs.
  3. Set aside.
  4. Preheat oven to 350°F (175°C).
  5. Line 8 muffin cups with parchment or silicone liners.
  6. In a large bowl, whisk together whipping cream, eggs, vanilla extract,
  7. Stir in almond flour, sweetener, baking powder until combined.
  8. Fold in 1½ cups of the chopped peaches.
  9. Divide batter among muffin cups, filling each about ¾ full.
  10. Top with remaining peaches.
  11. Sprinkle streusel topping evenly over each muffin.
  12. Bake for 25–30 minutes, until golden brown and a toothpick inserted in the center comes out clean.
