Ingredients
- 1¾ cups powdered sugar (or powdered sweetener)
- ¾ cup cocoa powder
- ¼ tsp salt
- 3 large egg whites
- 1 tsp instant coffee
- 1 tsp vanilla extract
- ½ cup sugar-free chocolate chips
Directions
- Preheat oven to 175°C (350°F) and line a baking tray with parchment paper.
- In a large bowl, whisk together powdered sugar, cocoa powder, salt, and instant coffee.
- Add egg whites and vanilla extract. Mix until smooth and glossy.
- Fold in the sugar-free chocolate chips.
- Scoop small portions onto the prepared tray, leaving space between each cookie.
- Bake for 10–12 minutes until the tops are shiny and crackly.
- Let cool completely before serving.
