Ingredients

  • 1¾ cups powdered sugar (or powdered sweetener)
  • ¾ cup cocoa powder
  • ¼ tsp salt
  • 3 large egg whites
  • 1 tsp instant coffee
  • 1 tsp vanilla extract
  • ½ cup sugar-free chocolate chips

Directions

  1. Preheat oven to 175°C (350°F) and line a baking tray with parchment paper.
  2. In a large bowl, whisk together powdered sugar, cocoa powder, salt, and instant coffee.
  3. Add egg whites and vanilla extract. Mix until smooth and glossy.
  4. Fold in the sugar-free chocolate chips.
  5. Scoop small portions onto the prepared tray, leaving space between each cookie.
  6. Bake for 10–12 minutes until the tops are shiny and crackly.
  7. Let cool completely before serving.
