High protein Kibbi

Ingredients

  • 500 g minced meat (triple minced)
  • 2.5 cups fine burgul, soaked and drained
  • 3 tsp salt
  • 2 tsp mild ground pepper
  • 1/2 cup cold water, added gradually
  • 400 g real feta cheese
  • 200 g cottage cheese
  • 1–2 tbsp yogurt

Directions

  1. Add the minced meat, soaked burgul, salt, and pepper to a food processor.
  2. Blend while gradually adding the cold water until the mixture becomes smooth and pliable.
  3. In a bowl, mix the feta cheese, cottage cheese, and yogurt until creamy.
  4. Take a portion of the kibbi dough and flatten it in your hand.
  5. Add a spoonful of the cheese filling in the center.
  6. Seal and shape into oval kibbi pieces.
  7. Place on a tray and chill for 20–30 minutes before cooking.
  8. Bake at 200°C (390°F) for 20–25 minutes until lightly golden, or air fry until crisp outside.
