Ingredients
- 2 large eggs (or 3 small eggs)
- ¼ cup cottage cheese
- 1¼ cups almond flour
- ¼ cup coconut flour
- ¼ cup melted butter, cooled (or avocado oil)
- ⅔ cup sweetener
- 1 tsp vanilla extract
- 1½ tsp baking powder
- 1⅓ cups blueberries
Directions
- Preheat oven to 180°C (350°F) and prepare a muffin tin with liners or lightly grease it.
- Blend all ingredients except the blueberries until smooth.
- Pour the batter evenly into the muffin tin.
- Fold or sprinkle blueberries into each muffin.
- Bake for 25 minutes or until golden and cooked through.
- Let muffins cool before serving. Enjoy!
