Ingredients

  • 2 large eggs (or 3 small eggs)
  • ¼ cup cottage cheese
  • 1¼ cups almond flour
  • ¼ cup coconut flour
  • ¼ cup melted butter, cooled (or avocado oil)
  • ⅔ cup sweetener
  • 1 tsp vanilla extract
  • 1½ tsp baking powder
  • 1⅓ cups blueberries

Directions

  1. Preheat oven to 180°C (350°F) and prepare a muffin tin with liners or lightly grease it.
  2. Blend all ingredients except the blueberries until smooth.
  3. Pour the batter evenly into the muffin tin.
  4. Fold or sprinkle blueberries into each muffin.
  5. Bake for 25 minutes or until golden and cooked through.
  6. Let muffins cool before serving. Enjoy!
