Healthy Sugar Free Vanilla Ice Cream

Ingredients

  • 2 cups heavy whipping cream
  • 1/2 cup unsweetened almond milk
  • 4 tbsp powdered erythritol or monk fruit sweetener
  • 1 tbsp vanilla extract
  • Pinch of salt
  • 1 tsp xanthan gum (optional, for softer texture)

Directions

  1. In a chilled bowl, whip the heavy cream until soft peaks form.
  2. In another bowl, mix almond milk, sweetener, vanilla, salt, and xanthan gum (if using). Mix until smooth.
  3. Gently fold the whipped cream into the vanilla mixture until fully combined.
  4. Pour into a loaf pan or airtight container.
  5. After 1-2 hours, stir lightly for a creamier texture.
  6. Freeze for 4-6 hours.
  7. Let sit at room temperature for 5 minutes before scooping.
  8. Add crushed pistachio, sugar-free chocolate chips, espresso powder, berry swirl, or toasted coconut.
