Ingredients
- 2 cups heavy whipping cream
- 1/2 cup unsweetened almond milk
- 4 tbsp powdered erythritol or monk fruit sweetener
- 1 tbsp vanilla extract
- Pinch of salt
- 1 tsp xanthan gum (optional, for softer texture)
Directions
- In a chilled bowl, whip the heavy cream until soft peaks form.
- In another bowl, mix almond milk, sweetener, vanilla, salt, and xanthan gum (if using). Mix until smooth.
- Gently fold the whipped cream into the vanilla mixture until fully combined.
- Pour into a loaf pan or airtight container.
- After 1-2 hours, stir lightly for a creamier texture.
- Freeze for 4-6 hours.
- Let sit at room temperature for 5 minutes before scooping.
- Add crushed pistachio, sugar-free chocolate chips, espresso powder, berry swirl, or toasted coconut.
