Healthy pistachio Lazy Cake

A healthier take on the classic lazy cake, featuring homemade almond flour biscuits coated in a rich dark chocolate and pistachio sauce.

Ingredients

  • 2 cups almond flour
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/2 tsp baking powder
  • Pinch of salt (optional)
  • 1/2 cup chocolate chips
  • 200 g 85% dark chocolate
  • 150 ml whipping cream
  • 1/3 cup sweetener
  • 1/2 cup crushed pistachios

Directions

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the almond flour, baking powder, and salt.
  3. Add the melted coconut oil and maple syrup, then mix until a dough forms.
  4. Fold in the chocolate chips.
  5. Shape into small biscuit pieces and place on a lined baking tray.
  6. Bake for 10–12 minutes or until lightly golden.
  7. Let cool completely, then break into bite-sized chunks.
  8. Heat the whipping cream until warm (do not boil).
  9. Add the dark chocolate and sweetener.
  10. Stir until smooth and glossy.
  11. Fold in the crushed pistachios.
  12. Place the biscuit chunks in a mixing bowl.
  13. Pour the chocolate-pistachio sauce over the biscuits and mix until evenly coated.
  14. Transfer to a loaf pan or cake mold lined with parchment paper.
  15. Refrigerate for at least 3–4 hours, or until firm.
  16. Slice and serve.
