Healthy pistachio Lazy Cake

Ingredients
- 2 cups almond flour
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 1/2 tsp baking powder
- Pinch of salt (optional)
- 1/2 cup chocolate chips
- 200 g 85% dark chocolate
- 150 ml whipping cream
- 1/3 cup sweetener
- 1/2 cup crushed pistachios
Directions
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the almond flour, baking powder, and salt.
- Add the melted coconut oil and maple syrup, then mix until a dough forms.
- Fold in the chocolate chips.
- Shape into small biscuit pieces and place on a lined baking tray.
- Bake for 10–12 minutes or until lightly golden.
- Let cool completely, then break into bite-sized chunks.
- Heat the whipping cream until warm (do not boil).
- Add the dark chocolate and sweetener.
- Stir until smooth and glossy.
- Fold in the crushed pistachios.
- Place the biscuit chunks in a mixing bowl.
- Pour the chocolate-pistachio sauce over the biscuits and mix until evenly coated.
- Transfer to a loaf pan or cake mold lined with parchment paper.
- Refrigerate for at least 3–4 hours, or until firm.
- Slice and serve.
