Ingredients
- 500 g frozen cooked shrimp
- 1/2 cup tapioca fiber
- 2 tbsp lupin flour
- 2 tsp xanthan gum
- 1 tsp salt
- Water (added gradually until a thick batter forms)
- 1 cup mayonnaise
- 3 tbsp sriracha sauce (or any hot sauce)
- 1 tsp honey
- 1 tsp soy sauce
- 1/2 tsp garlic powder
- 1/4 tsp sesame oil
Directions
- Preheat the air fryer to 200 deg C (390 deg F).
- In a bowl, combine tapioca fiber, lupin flour, xanthan gum, and salt.
- Gradually add water while mixing until a thick smooth batter forms.
- Pat the shrimp dry well.
- Dip the shrimp into the batter until fully coated.
- Arrange the shrimp in a single layer in the air fryer basket.
- Lightly spray with oil for extra crispiness.
- Air fry for 8-12 minutes, flipping halfway through, until golden and crispy.
- Add mayonnaise, sriracha, honey, soy sauce, garlic powder, and sesame oil to a bowl.
- Mix until smooth and creamy.
- Serve alongside the crispy shrimp.
