Healthy Dynamite Shrimp

Crispy air-fried shrimp coated in a low-carb tapioca-lupin batter, served with a creamy spicy mayo-sriracha dipping sauce.

Ingredients

  • 500 g frozen cooked shrimp
  • 1/2 cup tapioca fiber
  • 2 tbsp lupin flour
  • 2 tsp xanthan gum
  • 1 tsp salt
  • Water (added gradually until a thick batter forms)
  • 1 cup mayonnaise
  • 3 tbsp sriracha sauce (or any hot sauce)
  • 1 tsp honey
  • 1 tsp soy sauce
  • 1/2 tsp garlic powder
  • 1/4 tsp sesame oil

Directions

  1. Preheat the air fryer to 200 deg C (390 deg F).
  2. In a bowl, combine tapioca fiber, lupin flour, xanthan gum, and salt.
  3. Gradually add water while mixing until a thick smooth batter forms.
  4. Pat the shrimp dry well.
  5. Dip the shrimp into the batter until fully coated.
  6. Arrange the shrimp in a single layer in the air fryer basket.
  7. Lightly spray with oil for extra crispiness.
  8. Air fry for 8-12 minutes, flipping halfway through, until golden and crispy.
  9. Add mayonnaise, sriracha, honey, soy sauce, garlic powder, and sesame oil to a bowl.
  10. Mix until smooth and creamy.
  11. Serve alongside the crispy shrimp.
