Ingredients
- 1 egg
- 3 tbsp almond flour
- 1 tbsp cocoa powder
- 2 tbsp monk fruit sweetener
- ¼ tsp baking powder
- 1 tbsp coconut oil or butter
- 1 tbsp almond milk or coconut milk
- Optional: sugar-free chocolate chips
Directions
- In a microwave-safe ramekin or small bowl, whisk the egg.
- Add almond flour, cocoa powder, monk fruit sweetener, and baking powder.
- Mix in coconut oil (or butter) and almond/coconut milk until smooth.
- Fold in chocolate chips if using.
- Microwave for about 90 seconds total.
- Pause and check every 30 seconds to avoid overflow or drying out.
- Bake at 180°C (350°F) for 7–10 minutes until set.
- Let cool slightly and enjoy.
