Ingredients

  • 1 egg
  • 3 tbsp almond flour
  • 1 tbsp cocoa powder
  • 2 tbsp monk fruit sweetener
  • ¼ tsp baking powder
  • 1 tbsp coconut oil or butter
  • 1 tbsp almond milk or coconut milk
  • Optional: sugar-free chocolate chips

Directions

  1. In a microwave-safe ramekin or small bowl, whisk the egg.
  2. Add almond flour, cocoa powder, monk fruit sweetener, and baking powder.
  3. Mix in coconut oil (or butter) and almond/coconut milk until smooth.
  4. Fold in chocolate chips if using.
  5. Microwave for about 90 seconds total.
  6. Pause and check every 30 seconds to avoid overflow or drying out.
  7. Bake at 180°C (350°F) for 7–10 minutes until set.
  8. Let cool slightly and enjoy.
