Ingredients

  • 3 eggs
  • 1 tsp vanilla extract
  • 1 tbsp baking powder
  • 1 cup sweetener of choice
  • 1 cup Greek yogurt
  • 1½ cups shredded coconut

Directions

  1. Preheat your oven to 180°C (350°F).
  2. In a large bowl, whisk together the eggs, vanilla, sweetener, and Greek yogurt until smooth.
  3. Add the baking powder, shredded coconut, then mix until fully combined.
  4. Pour the batter into a greased or baking dish with parchment paper.
  5. Bake for 25–35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  6. Allow the cake to cool before slicing and serving.
