Ingredients
- 3 eggs
- 1 tsp vanilla extract
- 1 tbsp baking powder
- 1 cup sweetener of choice
- 1 cup Greek yogurt
- 1½ cups shredded coconut
Directions
- Preheat your oven to 180°C (350°F).
- In a large bowl, whisk together the eggs, vanilla, sweetener, and Greek yogurt until smooth.
- Add the baking powder, shredded coconut, then mix until fully combined.
- Pour the batter into a greased or baking dish with parchment paper.
- Bake for 25–35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
