Ingredients
- 100g dark chocolate (85% or higher recommended for keto)
- 1/2 cup coconut milk (full-fat recommended)
- 1/3 cup sweetener (e.g., erythritol or monk fruit blend)
- 3/4 cup almond flour (adjust according to texture)
- 1/3 cup cocoa powder for coverage
- Optional: 5ml rum (for flavor, if desired)
Directions
- In a microwave-safe bowl or a double boiler, gently melt the dark chocolate and coconut milk together. Heat in 30-second intervals in the microwave, stirring after each, until the chocolate is fully melted and smooth.
- Add the sweetener and almond flour to the melted chocolate mixture. Mix well until a thick dough forms. (If using, add 5ml rum here and mix in).
- Roll the mixture into 15 small, bite-sized balls.
- Place the rolled truffles on a plate or tray lined with parchment paper and cool in the fridge for at least 1 hour, or until firm.
- Once firm, dust the truffles generously with cocoa powder for coverage.
