Ingredients

  • 100g dark chocolate (85% or higher recommended for keto)
  • 1/2 cup coconut milk (full-fat recommended)
  • 1/3 cup sweetener (e.g., erythritol or monk fruit blend)
  • 3/4 cup almond flour (adjust according to texture)
  • 1/3 cup cocoa powder for coverage
  • Optional: 5ml rum (for flavor, if desired)

Directions

  1. In a microwave-safe bowl or a double boiler, gently melt the dark chocolate and coconut milk together. Heat in 30-second intervals in the microwave, stirring after each, until the chocolate is fully melted and smooth.
  2. Add the sweetener and almond flour to the melted chocolate mixture. Mix well until a thick dough forms. (If using, add 5ml rum here and mix in).
  3. Roll the mixture into 15 small, bite-sized balls.
  4. Place the rolled truffles on a plate or tray lined with parchment paper and cool in the fridge for at least 1 hour, or until firm.
  5. Once firm, dust the truffles generously with cocoa powder for coverage.
