No Bake Date Chocolate Bites

Ingredients
- 1 cup dates, soaked in hot water
- ½ cup almonds
- ½ cup pistachios
- ¼ cup cocoa powder
- ¼ cup coconut oil
- Pinch of salt
- 1 tbsp lemon zest
Directions
- Soak the dates in hot water for about 10 minutes, then drain well.
- Add dates, almonds, pistachios, cocoa powder, coconut oil, salt, and lemon zest to a food processor.
- Blend until the mixture becomes sticky and combined.
- Roll into small bite-sized balls or press into a lined tray and slice into squares.
- Refrigerate for at least 30 minutes until firm.
- Serve chilled and enjoy!
