Cinnamon Rolls Pancakes

Ingredients

  • 3 eggs
  • 3 tbsp cream cheese, softened
  • 2 tbsp melted butter
  • 1 tsp pure vanilla extract
  • 1 cup almond flour
  • 1 tbsp sugar (or sweetener)
  • 1 tsp baking powder
  • 2 tbsp almond butter
  • 2 tbsp sugar (or sweetener)
  • 2 tsp ground cinnamon
  • 3 tbsp water

Directions

  1. In a bowl or blender, combine eggs, cream cheese, melted butter, and vanilla extract.
  2. Mix until smooth and creamy.
  3. Add almond flour, sugar, and baking powder.
  4. Whisk until a smooth pancake batter forms.
  5. In a small bowl, mix almond butter, sugar, cinnamon, and water.
  6. Stir until smooth and pourable.
  7. Heat a non-stick pan over medium-low heat.
  8. Pour small portions of pancake batter into the pan.
  9. Swirl or drizzle some cinnamon filling on top of each pancake.
  10. Cook until bubbles appear on the surface.
  11. Flip carefully and cook the other side until golden brown.
  12. Serve warm.
