Cinnamon Rolls Pancakes

Ingredients
- 3 eggs
- 3 tbsp cream cheese, softened
- 2 tbsp melted butter
- 1 tsp pure vanilla extract
- 1 cup almond flour
- 1 tbsp sugar (or sweetener)
- 1 tsp baking powder
- 2 tbsp almond butter
- 2 tbsp sugar (or sweetener)
- 2 tsp ground cinnamon
- 3 tbsp water
Directions
- In a bowl or blender, combine eggs, cream cheese, melted butter, and vanilla extract.
- Mix until smooth and creamy.
- Add almond flour, sugar, and baking powder.
- Whisk until a smooth pancake batter forms.
- In a small bowl, mix almond butter, sugar, cinnamon, and water.
- Stir until smooth and pourable.
- Heat a non-stick pan over medium-low heat.
- Pour small portions of pancake batter into the pan.
- Swirl or drizzle some cinnamon filling on top of each pancake.
- Cook until bubbles appear on the surface.
- Flip carefully and cook the other side until golden brown.
- Serve warm.
