Authentic Lebanese Falafel

Ingredients

  • 2 cups dried chickpeas (soaked overnight)
  • 1 small onion
  • 4 garlic cloves
  • 1 cup fresh parsley
  • 1/2 cup fresh cilantro
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper
  • 1 tsp baking soda
  • Salt to taste
  • 1 tbsp sesame seeds (optional)
  • Oil for frying

Directions

  1. Soak the dried chickpeas overnight, then drain well.
  2. Add the chickpeas, onion, garlic, parsley, and cilantro to a food processor. Blend until finely combined.
  3. Add cumin, coriander, cayenne pepper, salt, baking soda, and sesame seeds. Mix well.
  4. Refrigerate the mixture for 30 minutes.
  5. Shape into small balls or patties.
  6. Heat oil and fry until golden brown and crispy on both sides.
  7. Serve warm with vegetables, pickles, tahini sauce, or keto bread.
