1 Minute Mocha Almond Cupcake

Ingredients

  • 1 egg
  • 4 tbsp almond flour
  • 1 tsp baking powder
  • 3 tbsp sweetener
  • 1 tbsp unsweetened cocoa powder
  • 1/4 cup instant coffee

Directions

  1. Preheat the oven to 170 deg C (340 deg F) or prepare microwave-safe ramekins.
  2. In a bowl, whisk the egg and sweetener together.
  3. Add almond flour, baking powder, and cocoa powder.
  4. Pour in the instant coffee and mix until smooth.
  5. Divide the batter between 2 ramekins or cupcake molds.
  6. Bake for 8-10 minutes or microwave for about 60-90 seconds until set.
  7. Let cool slightly before serving.
